My Great Aunt Karens CRAB/CREAM CHEESE WONTONS
Ingredients:
8oz cream cheese (room temp)
½ tsp sesame oil
¼ tsp soy sauce
¼ tsp pepper
1 ¼ C chives
2 cloves garlic
Crab ( I use fake)
Wontons, 1 beaten egg, oil
Preparation:
Mix all ingredients in order. Place in wonton, and fold over sides. Use beaten egg to moisten edges of side so they seal together. Fry in oil @ 350 about 1 minute. Drain on paper towel.Can make, cool, and wrap in airtight container and freeze. To re-heat, arrange frozen wontons on baking sheet. Bake in 300 oven until hot, about 15 minutes

Smoky Cheese Ball
Ingredients:
2- 8oz packages cream cheese
2 c. shredded smoky cheddar cheese (8 oz)
½ c. butter or margarine
2 tbsp milk
2 tsp. steak sauce
1 c. finely chopped nuts
Assorted crackers
Preparation:
Combine cream cheese, shredded cheese, softened butter, milk and steak sauce in a mixing bowl. Beat with mixer until fluffy. Chill slightly and shape into ball. Place nuts on wax paper and gently roll cheese ball over the nuts to coat. Serve with crackers. (Makes 1 large ball or 2 small balls.)

French Bread Dip
Ingredients:
1 pt. IMO
1c mayonnaise
1 bunch green onions
1 can water chestnuts
½ pkg. spinach-chopped
1 pkg. Knorrs dry vegetable soup mix
Preparation:
Mix all ingredients together- French Bread-cut off top and scoop out-leaving shell and use pieces to dip in the mix.
Fill scooped out bread shell with mix

Sausage-Stuffed Loaf
Ingredients:
2 Italian sausages
½ lb. ground beef
½ c. chopped onion
¼ c. chopped green pepper
1 medium tomato-chopped
1 can (15 oz.) chunky Italian-style tomato sauce
½ tsp. dried basil
½ tsp. dried oregano
½ tsp. sugar
¼ tsp. aniseed
¼ tsp. salt
⅛ tsp. garlic powder
1 loaf (1 lb) French bread
¼ – ½ c. shredded Parmesan cheese
Coarsely ground pepper
Preparation:
In a skillet, cook sausages until no longer pink. Remove and set aside. In the same skillet, cook beef, onion and green pepper until beef is no longer pink; drain. Stir in tomato, tomato sauce and seasonings. Cut sausages in half lengthwise and slice; add to meat sauce. Cut a wedge out of top of the bread, about 2 in. wide and three-fourths of the way through the loaf. Fill loaf with meat sauce. Sprinkle with Parmesan cheese and pepper. Wrap in heavy-duty foil and bake at 400 ° for 15-20 minutes or until heated through. Yield: 6 servings.

Banana Bread
Ingredients:
½ c. shortening
1 c. sugar
2 eggs
¾ c. mashed ripe banana
1¼ c. sifted all-purpose flour
¾ tsp. salt
½ tsp. baking soda
Preparation:
Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in mashed (well) bananas. Sift together dry ingredients and add them to the banana mixture. Pour into greased 9x9x2-in. loaf pan. Bake at 350º for 30-35 minutes

Mediterranean Salad
Ingredients:
1 Cucumber (chopped)
1 Tomato ( chopped)
1/2 Red onion (chopped)
1/2 cup of Black olives (cut up)
1/2 Sweet pepper (red, orange or yellow /chopped)
Feta cheese
1/2 cup Lite zesty Italian dressing
Preparation:
Mix all ingredients add Italian dressing and top with Feta Cheese—-Double for a bigger salad!

Taco salad
Ingredients:
1 lb. ground beef
1 can kidney beans – drained
1 head lettuce
4 tomatoes, 1 large onion chopped,
1 bottle French dressing
Hot sauce
1 avocado
1 can olives
Salt and pepper
Sour cream
Sharp cheddar cheese grated – 1 loaf
Tortilla chips (crushed)
Preparation:
Cook ground beef until red is gone. Add beans partially drained and let simmer awhile.
In a large bowl tear lettuce, add tomatoes, onion, avocado, olives, cheese. Mix with dressing. Add a few drops of hot sauce and mix again. Add hamburger & beans, salt & pepper & crushed chips. Top each serving with a spoonful of sour cream and hot sauce (optional).

Dill Pickle Pasta Salad
Ingredients:
1 lb elbow pasta salad, cooked
8oz cheddar cheese, cubed
2 cups sliced dill pickles
1/2 cup dill pickle juice
3 Tablespoons fresh dill
1 cup mayo
1/2 cup sour cream
1/4 teaspoon pepper
1/2 teaspoon garlic salt
Preparation:
1. Place cooked pasta in a large mixing bowl.2. Add in cheese, pickles, pickle juice, dill, mayo, sour cream, pepper and garlic salt, stir to combine.3. Cover and refrigerate for at least 2 hours

Breakfast Burrito
Ingredients:
1 roll Sausage (ground and cooked)
1 package of Bacon (cut up and cooked)
1 cup Ham cut-up (cooked)
1/2 cup of green or red pepper
1/2 cup of onion
1/2 cup of cooked hashbrowns or rice (your choice)
1/2 cup of salsa
Tortilla shells (I like to use the large flour ones)
1 cup of shredded cheese
Preparation:
Cook and mix all of the above ingredients (except tortilla shells and cheese)
Warm tortillas, then put ingredients into the tortillas and top with cheese
Roll tortillas into burritos shapes
Then I press and cook them on the frying pan on both sides.

Tater Tot Casserole
Ingredients:
Frozen bag of tater tots
1 lb of hamburger
1 can of cream of celery soup
1 cup of shredded cheese
Salt, pepper, Johhnys seasoning
Preparation:
Brown hamburger and drain fat.
Mix in can of celery soup
Season to taste with above seasonings
Mix in tater tots
Pour into casserole dish and top with shredded cheese
Bake at 350 degrees for 25-30 min

Beef Stroganoff
Ingredients:
4 lbs lean round steak
3 big brown onions
2 med-size cans mushrooms (stems & pieces)
1 tbsp Worcestershire sauce
1 qt. sour cream
1 bay leaf, glove garlic, paprika
Preparation:
Shred meat into ⅛ inch slices and cut into ¼ inch strips. Pour juice off mushrooms into bowl with 3 tbsp. Flour and stir to a smooth paste. Complete the sauce by stirring in 1 tbsp Worcestershire sauce and sour cream. Peel, quarter and slice onions.
Heat 2 large skillets. Put ¼ lb. Butter in one and fry onions. When golden and translucent, stir in the mushrooms and sour cream sauce and allow mixture to cook for a few more minutes.
Put a split clove of garlic and a bay leaf in the other pan with 1 tbsp shortening. When pan is very hot, put in meet and stir so that all pieces sear quickly on all sides. When brown, sprinkle with salt, pepper and paprika. Use a heavy hand in this for seasoning must be strong enough for all the other ingredients.
Add mushroom, onions and sauce to the meat and simmer all for 1/2 hour. It will need almost constant stirring. Serve now, or if time, set aside for 24 hours to allow some further blending. Reheat in moderate oven (350º) for 30 minutes.

Smothered Pork Chops
Ingredients:
6 pork chops, center cut
Salt and pepper to taste
1 can mushroom soup
½ tsp thyme
1 tsp parsley flakes
½ c. sour cream
1 3½ oz. can French-fried onions
Preparation:
Brown chops; arrange in baking pan and season with salt and pepper. Combine soup, ½ can water, and thyme. Heat. Add parsley, sour cream and half the onions. Pour over chops; cover. Bake at 350 ° for about 1 hour. Remove cover. Add remaining onions. Bake 5 minutes longer. Makes 6 servings

My Grandpa Paynes Chicken & rice
Ingredients:
1 whole chicken
3 cans cream of mushroom soup
2 boxes of rice a roni
Preparation:
Cut the chicken into pieces and remove the skin
Cook the chicken and cream of mushroom soup in a crock pot all day.
Strain the chicken and keep the juice from the crockpot.
The chicken meat will fall apart remove the bones from the mix
Cook the rice a roni as instructed on the box, however instead of using water, use the juice from the crockpot.
Add the chicken meat to the rice simmer a few minutes longer and serve up

Beef Enchiladas
Ingredients:
1 dozen corn tortillas
Grated Cheddar Cheese
Sauce:
4 tbsp flour
1/3 cup cooking oil
2 tbsp chili powder
1 tsp oregano
1 large onion, chopped fine
1 1/2 tsp. garlic
3 (8 ounces) cans tomato sauce
3 cups water
1 1/2 tsp salt
1/4 tsp pepper
Filling:
1 pound ground beef
1 small onion
1 can chopped olives
Preparation:
Sauce: Mix all the ingredients together in a large skillet and simmer covered for one (1) hour. While sauce is cooking, brown beef with the onion. Drain off the grease and add chopped olives. Season beef with salt and pepper as desired. Set filling mixture aside. Preheat oven to 350 degrees.
Dip tortilla shell in warm sauce. Lay in 9×12″ baking dish. Fill with about 2 tbsp of the meat mixture and top with cheese. Fold the sides of the tortilla towards the middle, so it is shaped like an open-ended burrito. Do this for all shells. Pour remaining sauce over the top and sprinkle with grated cheese. Heat in oven for about 20 minutes. Freezes well.

No Bake Cookies
Ingredients:
½ c. butter
2 c. sugar
½ c. milk
3 tbsp. cocoa
½ c. creamy peanut butter
4 c. rice krispies
1 tbsp. vanilla
Preparation:
Boil sugar, milk, cocoa, and vanilla. After boiled, add peanut butter. Add rice crispies and mix well. Drop spoonfuls onto pan and freeze.
