Breakfast

 

 

Here are some of my favorite breakfast foods and their recipe

Stuffed french toast

1 loaf of french bread sliced into 1 to 1-1/2 in pieces

1 lb. ground sausage

1 c. mozzarella cheese, shredded

3 eggs

1 c. milk

 

Brown sausage. Sprinkle mozzarella cheese on top (while sausage is still in the pan) to allow it to become slightly melted over the meat.

Cut a 1-2 in. slit in the center of each slice of bread.

Preheat griddle to 325 degrees.

Beat eggs in a separate bowl.  Add milk to egg mixture.

Spoon sausage and cheese mixture into slit of each slice of bread.

Dip bread in egg/milk mixture and place on preheated griddle.

Cook toast on both sides until brown and bread is not wet.

Top with fruit or syrup.

Orange Julius

INGREDIENTS

  • 1 cupmilk (whole, 2%, or skim)
  • 2 teaspoonsvanilla extract
  • 16-ounce can frozen orange juice concentrate
  • 1/2 cupsugar (or sugar substitutes, check package for equivalence)
  • 1 1/2 cupsice

INSTRUCTIONS

  1. Blend the milk and vanilla: Pour the milk and vanilla in a blender and pulse until combined.

  2. Add the frozen concentrate: Add the frozen orange juice concentrate. Blend until fully combined with the milk.

  3. Add the sugar and ice cubes: Blend until cubes are crushed and mixture has thickened. If things end up a little thick, just add a tablespoon of water and mix once again.

  4. Pour and enjoy: Pour the drink into glasses. Serve with a straw and sip your way to blissful happiness.

French toast recipe

 

1 loaf of Texas Toast bread

3 eggs

1 cup milk

1/2 Tbsp cinnamon and sugar mix

1 tsp vanilla

 

Preheat griddle to 325 degrees.

Beat eggs until well blended.  Add 1 cup of milk, cinnamon and sugar, and vanilla.

Dip bread on each side in the egg mixture (taking care not to soak the bread completely), place on preheated griddle.

Cook on each side until golden brown.

Breakfast Casserole

Recipe

Instructions

  1. Preheat oven to 375 degrees F. Spray 9 x 13″ baking dish with cooking spray.
  2. In a medium bowl, stir together potatoes, ham, 1/2 c. cheese, and green onions. Spread mixture evenly in prepared baking dish.
  3. In a small bowl, whisk together eggs, evaporated milk, garlic powder, salt, and pepper. Pour evenly over potato mixture.
  4. Cover with foil, and bake for 40 minutes. Remove cover, and sprinkle remaining 1/2 c. cheese over casserole. Bake uncovered an additional 15 minutes or until hot and bubbly and knife inserted in center comes out clean.

Dinner recipes

 

These are some of my favorite dinner recipes as of now.

Potato Pizza

 

pizza dough

1 1/2 cups of warm water-shower temp for a kid

1-1/2 Tbsp yeast

1 1/2 tbsp of sugar

1 1/2 tsp of salt

3 1/2 -4 cups of flour

 

instructions

mix water, yeast, sugar, and salt. let sit for about five minutes. add flour until forms stiff dough. pat into greased jelly roll pan with about 2 tbs cornmeal sprinkled on top. Top unbaked dough with mashed potatoes and toppings. cook at 490 degrees for about 15 min or so until top and bottom is golden brown.

 

Toppings:

4-6 servings mashed potatoes (Instant or homemade)

Crumbled bacon

Shredded cheddar cheese

Shredded mozzarella cheese

Sliced peppers

Chicken pot pie

 

 

1/3 c. marg.

1/3 c. flour

1/3 d onion chopped

1/2 tsp. salt

1/4 tsp. pepper

1 3/4 c. chicken broth

2/3 c. milk

2 c. cubed chicken cooked

1-10 oz pkg frozen peas and carrots, cooked

1 refrigerator pie crust, cut into 1-inch strips

 

instructions: heat marg. over low until melted, blend in flour, onion salt and pepper. cook over low heat stirring constantly until mixture is smooth and bubbly. remove from heat, stir in broth and milk. bring to boil again, stirring constantly. boil for 1 min add chicken and veggies pour into baking dish. Layer pie crust strips in a crisscross pattern over the top.

Tacos

10 hard taco shells

1 lb ground beef

3 T taco seasoning

1/3 c. water

1 can refried beans

shredded cheddar or Mexican blend cheese

 

1.Brown ground beef.

2. Add taco seasoning and water until mixed well and water is absorbed

3. Mix with refried beans (I usually add less than the can but you can do this to preference).

4. Stand taco shells in 9×13 pan

5. Fill tacos 2/3 full of meat and bean mixture.

6. Top with shredded cheese.

7. Bake at 325 degrees for 10 minutes or until cheese is melted.

8 Top with favorite taco toppings–shredded lettuce, tomatoes, etc.

Doggoners

this is our family’s favorite way to make hamburgers when we grill.

 

Grilled hamburgers

Grilled Hot dogs

Pepper jack cheese slices

Cheddar cheese slices

Cooked bacon slices

Guacamole

 

1. Slice hot dogs in half lengthwise.

2. Top burgers with pepper jack or cheddar cheese

3. Place a slice of bacon on top.

4. Place sliced hot dogs on top of the bacon.

5. Add one more slice of cheese and keep warm on the grill until cheese is melted.

Potato soup

 

2 c of diced potatoes

1/2 c minced onion

1/2 c diced cellary

2 1/2 tsp of salt

2 1/2 c boiling water

4 t butter

4t flour

1/4 tsp pepper

1/2 tsp dry mustard

1 1/2 Worcestershire sauce

2c milk

1/4 lb grated cheese

1 t parsley

 

 

instructions

 

cook veggies and 1 tsp salt in boiling water 15 min. make white sauce from other ingredients. add cheese and stir while sauce into mixture. add parsley and tomatoes if desired

Sloppy joes

 

 

1 lb hamburger

1 1/2 tsp lemon juice

2 tsp vinegar

1 1/2 T water

2/3 c ketchup

1 T brown sugar

1 t den onion

1 tsp  dry mustard

1 tsp salt

1/8 tsp pepper

simmer 15-20 minutes.  Serve on hamburger buns.

Teryaki Chicken

 

 

1 c of soy sauce

1 c. oil

1 can 7 up

1 tsp garlic

1 tsp horseradish

marinate over nite

serve with rice and veggies

Muddy Buddies

Ingredients

  • Into large bowl, measure cereal; set aside.

  • In 1-quart microwaveable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.

  • Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

PB chocolate chip cookies

 

 

INGREDIENTS

DIRECTIONS

  • Preheat oven to 325 degrees F.
  • Have ready at least 2 baking sheets lined with parchment paper.
  • Cream butter until smooth.
  • Add peanut butter and both sugars and beat until combined well.
  • Add egg and beat well.
  • Stir in flour and baking soda gradually until well combined.
  • Stir in chocolate chips by hand.
  • Using a meatball scooper or a spoon, scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2″ gap between each cookie.
  • Bake for about 15 minutes or until cookies are just firm around the edges- don’t overbake- if you wait until they are brown on top, they will be too hard.
  • Slide parchment sheet, cookies and all, carefully off pan and onto your counter, set a new piece of parchment paper onto your baking sheet and repeat until all dough is baked.
  • Meanwhile, as the next batch bakes, remove baked cookies from the parchment and let cool completely on wire racks.
  • Wipe off the crumbs from the old sheet of parchment and you can reuse it for your next batch.
  • These will keep about 3 days stored in a cookie tin (for crisp cookies) or an airtight plastic container (for softer cookies).

MUD PIE

 

1 package of oreo cookies

1/2 c. butter

1 carton of your favorite ice cream

chocolate syrup

1 med container of whipped topping

 

  1. Set ice cream out on counter to soften.
  2. Blend oreos until fine crumbs.  Spread in bottom of 9×13 pan.
  3. Melt butter. Mix with crumb mixture until a cookie crust is formed.
  4. Spread ice cream on top of crust mixture.
  5. Top ice cream layer with chocolate syrup (could also use hot fudge).
  6. Layer whipped topping on top of ice cream and syrup.
  7. Freeze until set (2 hours or more).

Cheddar biscuits

(I know this is not a dessert I just had to put it in somewhere)

 

INGREDIENTS:

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper, optional
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups shredded sharp cheddar cheese

FOR THE TOPPING

    • 3 tablespoons unsalted butter, melted
    • 1 tablespoon chopped fresh parsley leaves
  • 1/2 teaspoon garlic powder

DIRECTIONS:

  1. Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
  2. In a large bowl, combine flour, sugar, baking powder, garlic powder, salt and cayenne pepper, if using.
  3. In a large glass measuring cup or another bowl, whisk together buttermilk and butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Gently fold in cheese.
  4. Using a 1/4-cup measuring cup, scoop the batter evenly onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown.
  5. For the topping, whisk together butter, parsley and garlic powder in a small bowl. Working one at a time, brush the tops of the biscuits with the butter mixture.
  6. Serve immediately.
