Hamburger recipe:
500 grams of ground beef
2 medium-large onions
1 tablespoon heaped mustard
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup carbonated soda water
1/3 teaspoon cumin (optional – only
for those who like the aroma and taste)

Macaroni cookies:
160 grams of ground almonds
150 grams of powdered sugar
60 grams of protein - mix with the almonds
55 grams of whipping protein
150 grams of sugar
40 grams of water
Preparation :
Grind together the almonds and powdered sugar in pulses, strain,
(It's okay if they stay a little on the strainer so as not to
crush with your hand!) And mix together with the 60 protein until
a uniform mass.
The water and sugar are heated on a bain marie when it reaches
110-113 degrees
Start whipping the protein in the mixer
and when it reaches 118 pour in a thin
stream on the side of the mixer.
Create the food color of your choice (gel
food color) and beat until a very stable mass!
Combine the masses - into the almond bowl,
transfer some of the whipped protein and mix,
"drop the volume of the mass" and in the second bengal,
fold gently with the help of a ladle only until a uniform
mass is not too much !!
Drizzle over silicone / baking paper and tap the mold
so that all the air bubbles come out.
Dry about 40 at room temp (because winter) in summer
is better ventilated.
150 oven on turbo (that the heat will dissipate)
for about 10-15 minutes depending on your oven.
After 4 min in the oven rotate the mold.
After baking, wait for the macaroons to cool and only then fill them!

Pasta Rosa Recipe:
2 cups of cooking cream - 250 g each cup (15% or more)

A small package of tomato paste (100 g)
