Mofflata

Mofflata is a sweet North African dish that characterizes “Mimouna”.

The mofflata is made of dough that is prepared quickly at the end of Passover. The preparation process includes stretching the dough over a greased tray with oiled hands. The placed muflata is placed on a designated frying pan, and after it has been fried on both sides, another mufleta is placed under it. On the frying pan is a pile of several flutes, which keep the heat of the lower muflata on one hand, and continue to be done on the other.

The muflata dough contains water and flour, and in the preparation process, oil is added to it. The absence of the need to rise and the short preparation time make it possible to prepare the truffles immediately after the end of the holiday, without having to deal with chametz during the holiday.

It is customary to eat mufleta with sweet spreads such as honey, jam or chocolate for application.

The muphalata color is usually light yellowish, and tends to light brown
