Sweet Cinnamon Rolls

My moms been using this recipe since she was a teenager, and we make these Cinnamon rolls once in a while and make enough for a weeks breakfast.

Ingredients:

-1/2 cup warm water (not hot)

-2 pkg. active dry yeast

-1 1/2 cups lukewarm milk

-1/2 cup sugar

-2 tsp. salt

-2 eggs

-1/2 cup soft shortening

-7 to 7 1/2 cups GOLD MEDAL Flour

 

Directions:

1) In a bowl dissolve yeast in water

2) Measure flour and add milk, sugar, salt, egg, shortening and half of the flour to the yeast. Mix with spoon until smooth.

3) Add remaining flour to handle easy.

4) Turn onto lightly floured board, kneed until smooth (5 min). 5) Round up in a greased bowl and cover with a cloth and let it rise in a warm place until doubled the size in about 1 1/2 hour. 6) Once it’s double the size spread with 2 tbsp of softened butter and sprinkle with 1/2 cup sugar and 2 tsp of cinnamon. 7) Then roll up tightly, pinching edges of the roll together.

8) Cut the roll into 1 in slices.

9) Put into a pan or cupcake holders.

10) cover and let it rise for about 35-40 min.

11) Once they rise, heat your oven to 375. Bake 25-30 min frost while warm.

Banana Bread

Me and my family would make banana bread on the weekend to have a fast and easy breakfast on the go.

Ingredients:

-1 3/4 cups all purpose flour

-2/3 cups sugar

-2 teaspoons baking powder

-1/2 teaspoon baking soda

-1/4 teaspoons salt

-1 cup smashed ripe banana (2 to 3 medium bananas)

-1/3 cup shortening, margarine, or butter

-2 tablespoons milk

-2 eggs

-optional 1/4 cup chopped nuts

 

Directions:

1) in a large mixing bowl combine 1 cup of the flour, sugar, baking powder, baking soda and salt.

2) Add mashed banana shortening, margarine, or butter and milk.

3) Add eggs, remaining flour beat till blended (stir in optional nuts)

4) Pour butter into greased loaf pan

5) Bake in a 350 degree oven for 55 to 60 min

6) Place on a wire wrack to cool

Mexican Meal #1

Mexican Meal #1 was one of the 3 main Mexican meals that we would always eat. Its fast and easy and taste really good!

 

Ingredients:

-1 lb of hamburger meat

-1 can of corn

-4 oz of tomato sauce

-2 tablespoons of flour

-1 1/2 teaspoon of Johnny Seasoning

-1/2 teaspoon of chicken bouillon

-1/4 teaspoon pepper

 

Directions:

1) Brown hamburger meat in skillet with the johnny seasoning, chicken bouillon and pepper

2) Drain the grease from the hamburger meat when its cooked with a paper towel

3) Add 4 oz of tomato sauce and the 2 tablespoons of flour to thicken the sauce

4) Drain the corn and add it to your tomato sauce and hamburger meat

Mexican Meal #2

Mexican Meal #2 at our house is very common at our house.

Ingredients:

-1 pound ground beef

– Taco seasoning

-Freshly grated cheese

-Avocado

-Red Pepper

-Tomato

-Hard shell tacos

 

 

Directions:

1) Place your ground beef in a hot pan.

2) Once you ground beef is separated, sprinkle johnny seasoning over the beef.

3) Drain your now cooked beef with a paper towel.

4) Add your choice of taco seasoning to your beef.

5) Put your cooked beef in your hard shell taco.

6) Slice your avocado in your shell on top of your beef.

7) Sprinkle the red pepper on your avocados.

8) Dice your tomato’s and put them on top of your avocado.

9) Lastly, sprinkle your grated cheese on your taco to top it all of.

Mexican Meal #3

AKA Kimladas Enchiladas 

Mexican meal #3 at our house is made with chicken. My dad gets really bad gout so we dont get to eat a lot of red meat at our house. They are called Kimladas because my moms name is Kim and she wanted to name the recipe after her.

ingredients

-1 Rotisserie Chicken

-1 can chili con carne without beans

-2 cups Grated cheddar cheese

-Flour tortillas

-Cooking spray

Directions:

1) Preheat oven to 350

2) Spray a 11×14 casserole dish with cooking spray

3) Take chicken meat off the bones and chop it into cubes

4) Place chicken meat inside a flour tortilla

5) Spread grated cheese over top of chicken and roll the tortilla

6) Place inside casserole dish

7) Repeat for a total of 12 enchiladas

8) When all the enchiladas are in the casserole dish, spread the chili con carne over the top

9) Bake for 20 minutes

10) Take out of oven and sprinkle grated cheddar cheese over the top

11) Place back in oven for 5 minutes or until the cheese is melted

Cajun Chicken Pasta

Cajun chicken is one of the many Italian meals my mom cooks. This is a delouse recipe that we got from my aunt when i was about 8 and we have cooked it ever since.

 

Ingredients:

-4 oz linguine pasta

-2 skinless boneless chicken breast halves

-2 teaspoons Cajun seasoning

-2 tablespoons butter

-1 red bell pepper sliced

-1 green bell pepper sliced

-1 green onion chopped

-1 cup heavy cream

-1/4 teaspoon dried basil

-1/4 teaspoon salt

-1/8 teaspoon garlic powder

-1/4 cup grated Parmesan cheese

 

Directions:

1) Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

2) Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until almost tender (5 to 7 minutes).

3) Add the red bell pepper, green bell pepper, mushrooms and green onion. Saute and stir for 2 to 3 minutes. Reduce heat.

4) Add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through. Add the cooked linguine, toss and heat through. Sprinkle with grated Parmesan cheese and serve.

Garlic Butter Shrimp Zucchini Noodles 

This by far my favorite meal my mom makes! We rarely make this though because it takes a really long time to make, and time is hard to find in our family.

 

Ingredients:

-4 tablespoons unsalted butter

-4 cloves garlic minced

-1 lb of zucchini spiralized

-kosher salt

-Ground black pepper

-1 shallot minced

-2 tablespoons chopped fresh parsley leaves

-1 lb medium shrimp peeled

 

Directions:

1) Melt 1 tablespoon butter in a large skillet over medium heat. Add 2 cloves garlic and cook, stirring frequently until fragrant, about 1 minute.

2) Stir in zucchini noodles until tender about 2-3 minutes season with salt and pepper for taste.

3) Melt remaining 2 tablespoons of butter in the skillet. Add remaining 2 cloves garlic and shallot and cook stirring frequently, until fragrant, about 2 minutes.

4) Add shrimp season with salt and pepper, to taste. Cook Stirring occasionally in till pink and cooked through, 3-4 minutes.

5) Serve imedietly with zuchhini noodles.

Chicken Fettuccine Alfredo

Another simple recipe that my family makes. We eat a lot of Italian food in our house hold.

 

Ingredients:

-1- 1 1/2 pounds cooked chicken breasts

-1 lb fettuccine

-1 recipe homemade Alfredo sauce

-Parmesan cheese topping

Sauce:

-1/2 cup butter

-4 cups half and half

14 cups shredded Parmesan

-2-6 Tbs unbleached all-purpose flour

-salt and pepper for taste

 

Directions:

1) In a saucepan melt butter over medium heat

2) Whisk in half and half and heat for several minutes

3) Keep and eye on the heat so the sauce does not over boil

4) When the sauce is hot add cheese in hand fulls whisking in allowing cheese to melt.

5) Add flour a tablespoon at a time until sauce is thick like you want it. The sauce will thicken more as it cools.

6) Bring slightly salted water to a boil and boil your noodles.

7) Cook the chicken in a saucepan

7) Add sauce on chicken.

8) Add your noodles and serve with grated cheese.

Mac and Cheese

Mac and cheese was my favorite child hood go to lunch. Home made mac and cheese was the best stuff not that box mac and cheese. Heres how to make home made mac and cheese.

 

Ingredients:

-2 TBS butter

-2 TBS all-purpose flour

-1/2 TSP sea salt

-1/4 tsp garlic powder

-1 cup whole milk

-1/4 cup sour cream

-2 cups shredded cheddar cheese

-8 oz elbow macaroni

 

Directions:

1)Bring a pot of salted water to a boil then add your elbow noodles.

2)Mix flour, sea salt, and garlic powder in a small bowl. Set aside.

3)In a medium sauce pan over medium heat melt the butter

4)Add flour mixture and whisk to combine.

5)Cook for 1 minute until mixture is slightly brown.

6)Add 1 cup of milk and whisk until smooth.

7)Add sour cream and whisk until smooth.

8)Cook on medium heat until the mixture is thickened for about 3-5 minutes. Do not let it boil.

9)Add cooked pasta to the cheese sauce.

Turkey Avocado Panini

This is by far my most favorite lunch meal ever! We just started making these and may i tell you they are the most simplest delicious meal ever!

 

Ingredients:

-Panini bread (i get mine from Costco)

-Half of a avocado

-Red pepper

-Salt

-Pepper

-Sliced turkey

-Sliced mozzarella

-Bacon (optional)

 

Directions:

1)Plug in your panini press so it warms up.

2) Smash the half of your avocado sprinkling your red pepper, salt, and pepper on the smashed avocado.

3)Take your panini bread and smear the smashed avocado on one side.

4)Take tour optional cooked bacon and place it on top of your avocado.

5)Take your sliced mozzarella and set it on top of the bacon.

6)Take out your sliced turkey and put it on top of everything.

7)Set it in the press carefully and press down, flipping it every 3-4 minutes depending on how cooked you want it.

Zuppa Soup

This is my favorite soup in the entire world! I love when my mom makes this it is always so good. She always makes enough for the entire week so we dont have to cook everyday.

 

Ingredients:

-16 oz spicy Italian sausage

-8 slices of bacon

-1/2 large onion diced

-2-3 cloves of garlic minced

-28 oz low-sodium chicken broth

-3 cups of water

-5 medium russet potatoes thinly sliced

-1 TSP crushed red pepper flakes

-salt and pepper

-4 cups chopped kale

-1 cup heavy whipping cream

-Parmesan cheese

 

Directions:

1)Brown sausage in a large pot.

2)Set aside the cooked sausage.

3)Cut bacon into small pieces

4)Add bacon to a pot and cook until crispy.

5)Stir in chopped onion. Cook for 5-6 minutes.

6)Stir in garlic and cook for about 1 minute.

7)Add chicken broth and water to a pot. Add crushed red pepper flakes, salt, and pepper.

8)Add thinly sliced potatoes and the cooked sausage to the pot. And bring to a simmer on high heat.

9)Continue to cook till potatoes are tender.

10)Add kale to soup and simmer for an additional 10 minutes.

11)Stir in heavy cream.

12)Serve and top with Parmesan.

Chocolate Chip Cookies

This is my grandmas famous chocolate chip cookie recipe. She makes them every time I see her. They are bye far the best chocolate chip cookie I have ever had.

 

Ingredients:

-2 1/4 cups of all purpose flour

-1 teaspoon baking soda

-Fine salt

-12 tablespoons Crisco butter (has to be this kind of butter)

-3/4 cup packed light brown sugar

-2/3 cup granulated sugar

-2 eggs

-1 teaspoon pure vanilla extract

-One 12 oz bag of semisweet chocolate chips

 

Directions:

1)Position 2 racks in the center of the oven, and preheat to 375 degrees F. Line 2 baking sheets with parchment.

2)Whisk together the flour, baking soda and 1 teaspoon salt in a large bowl.

3)Beat the butter and both sugars on medium-high speed in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld mixer) until light and fluffy, about 4 minutes.

4)Add the eggs, one at time, beating after each addition.

5)Beat in the vanilla. Scrape down the side of the bowl as needed.

6)Reduce the speed to medium, add the flour mixture and beat until just incorporated. Stir in the chocolate chips.

7)Scoop 12 heaping tablespoons of dough about 2 inches apart onto each prepared baking sheet. Roll the dough into balls with slightly wet hands. Bake, rotating the cookie sheets from upper to lower racks halfway through, until golden but still soft in the center, 12 to 15 minutes (the longer the cook time, the crunchier the cookies). Let cool for a few minutes on the baking sheet, and then transfer to a rack to cool completely.

Cherry Pie 

Cherry pie is my most favorite pie ever! My grandma makes it for Christmas every year! Topped with melting vanilla ice cream it has to be the best dessert on the planet.

 

Ingredients:

-4 cups freshly frozen tart cherries

-1 to 1/2 cups granulated sugar

-4 tablespoons cornstarch

-1/8 tablespoon vanilla extract

-Your favorite pie crust recipe

-1 1/2 tablespoon melted butter  to dot

-1 tablespoon granulated sugar to sprinkle

 

Directions:

1)Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat.

2)In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well.

3) Add the vanilla extract, if desired, and mix.

4)Return the mixture to the stove and cook over low heat until thickened, stirring frequently.

5)Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.

6)Preheat the oven to 375 F

7)Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan.

8) Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.

9)Bake for about 50 minutes. Remove from the oven and place on a rack to cool.

Frosted Sugar Cookies 

This is my Tia Monquies secret Sugar cookie recipe. She never share it with anyone because its a secret. It was hard to get this recipe from her but, she finally gave it to me. I may just be her favorite. She makes these every Christmas.

 

Ingredients:

Sugar cookies:

-7 cups flour

-5 tsp baking powder

-1 tsp salt

-2 cups softened butter

-3 cups sugar

-4 eggs

-2 T vanilla

Frosting:

-1 T vanilla

-3 T milk

-1 T Karo light corn syrup

-4 cups powdered sugar

-1/2 cup softened butter

 

Directions:

1)Cream together your brown sugar, eggs, vanilla, and butter.

2)In a separate bowl mix your baking powder, sugar, and flour.

3)Slowly mix together your dry and wet ingredients using a cup at a time.

4) Bake the cookies at 375 in till they are no longer shiny.

5)Start on your frosting.

6)Cream together your vanilla, milk, corn syrup, and butter.

7)Slowly add in your powdered sugar.

8)Add milk if needed.

9)Frost cookies when cool.

Brownies 

Brownies are in my top 3 favorite desserts. I used to make my mom make brownies for my birthday than a cake. Heres my family’s brownie recipe.

 

Ingredients:

-1 C butter melted

-2 C white sugar

-1/2 C cocoa powder

-1 teaspoon vanilla extract

-4 eggs

-1 1/2 cups all-purpose flour

-1/2 teaspoon baking powder

-1/2 teaspoon salt

Directions:

1)Preheat oven to 350

2)Combine butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt.

3)Bake for 20-30 minutes.
