Introduction

 

Hello readers! I am glad to be sharing my family recipes with you. I have always had a passion for food (I mean who would food is like the best thing ever!) and I love cooking and baking with my family. There are so many different types of food to enjoy and try. That’s why I’m sharing this cookbook with you so you can enjoy them too!

 

I come from a mixed family. My dad and his side of the family is Mexican and let me tell you they make the best Mexican food, which is personally my favorite. My Mom however, comes from a white family. She has some very good recipes and my mom is one of the best cooks I know always coming up with something new and delicious!

Breakfast Burrito

This is one of my favorite breakfast foods. My mom makes these the best and we have to have them at least once a week. My mom has made these as long as I can remember, sometimes just wake up to these delicious burritos

 

Ingredients:

  • 3 eggs
  • 4 pieces of bacon
  • 2 tortillas
  • 1 a cup of Mexican shredded cheese ( the type of cheese doesn’t matter but the Mexican cheese is just the kind I use )
  • 2 cups of hash browns
  • Salt and pepper (optional )

 

Directions:

1. In a small bowl, mix the eggs, then add salt and pepper to your liking. Then Cook the eggs in a pan, scrambling them.

2. In a separate pan, put oil and let it heat up. Then add your hash browns and let them cook until crispy.

3. put wax paper on a cooking sheet and place the bacon on the sheet, make sure to leave enough room in between the bacon. Cook at 400 degrees Fahrenheit for about 10 minutes or until crispy.

4. Heat up the tortillas in the microwave or on the oven for a short period of time making sure not to burn them if they are on the oven.

5. Put all the stuff together on the tortillas including the cheese. Then wrap up the tortillas to make it burrito and enjoy!

 

Serving size: makes 2 burritos

Breakfast Sandwich

This is another one of my favorite breakfast that my mom makes. She came up with this recipe because my sister and I love the bacon gouda sandwiches from Starbucks and she was sick of buying them all time. That when she decided she would just take the basic idea and make it better. 

 

Ingredients:

  • 1 egg
  • 1 artisan roll
  • 2 slice of gouda cheese ( I like mine with a lot of cheese )
  • 2 slices of bacon

 

Directions:

1. In a small pan, crack open the egg, careful to not crack it. add salt and pepper to the egg and cook it over easy. Once done put on a plat to the side.

2. put the artisan roll in the oven or toaster and toast it to your liking.

3. put wax paper on a cooking sheet and lay your 2 pieces of bacon. Bake on 400 degrees Fahrenheit for 10 minutes or until crispy.

4. Put the egg on the artisan roll as well as the bacon and the cheese. The cheese should melt from the heat of the bacon and egg. If not then you can toast the bread after you put everything on it. It comes down to personal preference

 

Serving size: 1 sandwich

Avocado Toast

And here is another classic. I didn’t try this until recently but m mom makes it the best and yet it is so simple. I believe my mom found the recipe on Pinterest and made it her own. 

 

Ingredients:

  • 1 slice of white bread ( any type of bread is fine I just use white bread )
  • 1 avocado
  • salt
  • pepper
  • Tajin seasoning
  •  1 egg (optional**)

Directions:

1. In a small bowl, mash the avocado until smooth or a little bit chunky.

2. season it with Tajin, salt, and pepper. set the bowl aside for now

3. Put the bread in the toaster and let it cook. Once done put the toast plate and then put avocado on the toast. Season with more tajin on top and enjoy!

 

Optional** You can cook up an egg over easy to put on the avocado toast if you would like. I do that sometimes but it is totally optional.

French Toast

This is another good one that my mom makes. (I think there might be a trend here hehe) It’s just the classic french toast that most people are familiar with. My mom has been making this as long as I remember. 

Ingredients:

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 2 tablespoons sugar

  • 4 tablespoons butter

  • 4 eggs

  • 1/4 cup milk

  • 1/2 teaspoon vanilla extract

  • 8 slices of white bread

  • 1/2 cup maple syrup

Directions:

  1.  combine cinnamon, nutmeg, and sugar in a small bowl

  2. Set aside the bowl for now

  3. In a skillet, melt butter over medium heat.

  4. Whisk together cinnamon mixture, eggs, milk, and vanilla and pour into a container

  5. Dip the bread in the egg mixture

  6. Fry slices until golden brown, then flip to cook the other side. Serve with syrup.

Serving size: 8 slices of bread, so about 4 people

Biscuits and Gravy

This is by far my favorite breakfast ever. It is so so so good. Again my makes this, and she’s been making it since I was little. 

 

Ingredients: 

  • 1lbs of sausage

  • 4-5 cups of milk

  • 1 tsp of garlic powder

  • 1 tsp of onion powder

  • 1 1/2 tbsp of salt (to taste)

  • 1 1/2 tbsp of pepper (to taste)

  • 1 1/2 tbsp of cornstarch

  • 2 tbsp of water to mix into the cornstarch

  • 6 Biscuits

Directions:

  1. Fry the sausage

  2. Once the sausage is cooked, add the milk, garlic powder, seasoning salt, pepper, and onion powder.

  3. Let the mixture simmer

  4. Mix cornstarch and warm water, then slowly stir it to thicken

  5. Serve up on biscuits and enjoy

Grilled Cheese

My mom made this for me like this week and it was soooo delicious! You can never have too much cheese. Ever. 

 

Ingredients:

 -A loaf of french bread

-smoked gouda cheese

-Sharp cheddar cheese

-garlic powder

-butter

 

Directions: 

  1. cut the loaf into 1/2 thick slices
  2. take a pan with a lid and heat the butter on medium heat
  3. dip all slices of bread into the butter on one side.
  4. Set half of the slices aside
  5. Add the cheeses and cover the pan
  6. Let the cheese melt
  7. Add the other pieces of bread on top of the cheese with the butter side facing up.
  8. sprinkle garlic powder to taste
  9. flip the sandwiches, then add more garlic powder.
  10. then let them cook for 3 min.
  11. Check the sandwiches and continue to flip every 3 minutes until both sides are golden brown

Serving size: 8 sandwiches

Homemade Ramen

My mother found this delicious ramen repipe on Pinterest after going to a ramen restaurant. Then she added her own twist to it. 

 

Ingredients:

  • Soft or hardboil eggs
  • garlic cloves
  • sesame oil
  • cups of chicken or beef broth
  • soy source
  • Worcestershire sauce
  • white pepper
  • rice vinegar
  • sake (Rice wine)
  • Choice of meat (chicken, beef, shrimp, or pork)
  • ramen noodles
  • green onions
  • sesame seeds
  • chili oil (optional)
  • corn (optional)

Directions:

  1. Make sure to saute meat of choice before you start cooking, slice, and set aside.
  2. In a large pot, boil about an inch of water.
  3. add eggs, cover, and let cook for 8 minutes
  4. While the eggs are boiling chop the garlic and green onions
  5.  remove eggs when done, rinse with cold water, and peel
  6. Heat sesame oil in a pot on medium heat.
  7. Add garlic cloves and saute for 2 minutes.
  8. Add broth, soy sauce, Worcestershire sauce, white pepper. rice finger, and sake
  9. Stir, and let simmer for 15 minutes while the broth is simmering, fill another pot half full and boil the water on medium-high heat.
  10. slice the eggs in half
  11. add the noodles once the water is boiled, and let them cook until soft, then drain
  12. put the broth, onions, eggs, meat, noodles, and corn in a bowl. Top with chili oil and sesame seeds if wanted.

Serving size: 3-4
