About Me

 

My name is Amarri Larson and this is my cookbook. This Cookbook came to me as an idea from an assignment in class. Since I was eight years old, Cooking has fascinated me. My dad has pictures of me at that age looking like a total idiot cooking some eggs. These recipes are from my family and it kind of hurts to give them away like this. But, I figured it’s for the greater good and people need simple recipes for good cooking like this. Enjoy!

Dips & Sauces

Auntie’s Cheese Dip

Ingredients:

2 cups Mayonaise

2 cups Shredded Cheese

1 large Onion, finely chopped

8 Bacon strips, cooked and crumbled

1/2 cup finely chopped Sweet Red Pepper

1/2 cup finely chopped Green Pepper

1 teaspoon dried Oregano

1/2 teaspoon Garlic Powder

A 1 pound round loaf of Sourdough Bread

Directions:

  1. Preheat oven to 350°F
  2. In a large bowl, combine Mayonaise, Shredded Cheese, Onion, Bacon, Sweet Red Pepper, Green Pepper, Oregano, and Garlic Powder
  3. Cut the top fourth of the loaf of Bread, and carefully hollow out the bottom, leaving a 1-inch shell (save removed bread for another use)
  4. Spoon Cheese mixture into the Bread shell
  5. Wrap in a piece of heavy-duty foil
  6. Bake for 1 hour, or until heated thoroughly
  7. Serve with crackers

Thai Style Peanut Sauce

Ingredients:

3/4 cup Peanut Butter

1/3 cup Water

3 Tablespoon Hoisin Sauce

2 Tablespoon Lime Juice

4 1/2 teaspoon Soy Sauce

1 Tablespoon Sugar

2 1/2 teaspoon Chili Paste

1 medium Garlic Clove, pureed

Directions:

  1. Mix Everything
  2. Enjoy

Mama’s Marinara Sauce

Ingredients:

3 tablespoons olive oil

1 cup onion finely diced

1/3 cup carrot shredded

3 garlic cloves minced

1/4 cup fresh basil chopped

1/2 teaspoon dried oregano

salt and pepper

28 oz whole tomatoes canned

28 oz crushed tomatoes canned

2 tablespoons tomato paste

1-2 teaspoons sugar (optional)

1/2 cup water

Directions:

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and garlic. Cook until soft, about 5 minutes.
  2. Add whole tomatoes (with juice) and gently break apart with the spoon.  Stir in remaining ingredients.
  3. Simmer uncovered on low heat for 20 minutes or until sauce reaches desired consistency.
  4. Serve over spaghetti or enjoy in your favorite recipes.

Zuppa Toscana

Ingredients:

2 lbs. Italian Sausage

1 can of Oscar Meyer Bacon Bits OR 1 pound of Chopped Bacon

4 large Russet Potatoes, cut into thumb-sized pieces and peeled

4 cloves Garlic

2 chopped White Onions

4 Cups Kale

4 14.5 oz. Cans Chicken Broth

2 qts. water

2 Cups Heavy Whipping Cream

Directions:

  1. Preheat oven to 300°F
  2. Bake Sausage for 30 minutes, then rinse and cool
  3. Put Onions, Potatoes, Chicken Broth, Water, and Garlic into a Large Pot
  4. Bring to a boil, then add Sausage and Bacon
  5. Let boil for 10 minutes, then add cream and kale

Laura’s Clam Chowder

Ingredients:

1/2 pound Bacon, diced

4 medium Potatoes, peeled and diced

1/4 cup Flour

2 bottles Clam Juice

2 6.5 oz. cans of minced Clams, with juice

Salt & Pepper (to taste)

1 pint Heavy Whipping Cream

Directions:

  1. In large pot, sauté Bacon, until crisp
  2. Take out most of the excess fat
  3. Add potatoes and sauté for a few minutes then stir in the flour
  4. Add clam juice and bring to a boil (if more liquid is needed then add 2 cups of milk)
  5. Simmer, stirring until potatoes are tender (about 20 minutes)
  6. Add Salt & Pepper, and Heavy Whipping Cream
  7. Bring back up to a boil for 5-7 minutes
  8. Add clams

Mom’s Chili

Ingredients:

2 or 3 lbs. Ground Beef

1 large Onion, medium chopped

1 28 oz. can Crushed Tomatoes in puree

1 15-19 oz. can Kidney Beans, undrained

1/4 cup Frank’s Redhot Original Cayenne Pepper Sauce

2 packages (1 1/4 oz.) chili Seasoning Mix

shredded cheddar cheese (optional)

sour cream (optional)

Directions:

  1. In a large nonstick pot, cook beef until browned
  2. Add onion; cook 3 minutes. Drain
  3. Stir in Tomatoes, Beans, Sauce, and Seasoning Mix
  4. Bring to a boil, stir often
  5. Simmer partially covered for 15 minutes, or until flavors are blended and stir often
  6. Serve with Cheddar and Sour Cream

Desserts

Grandma’s Banana Bread

Ingredients:

2/3 cups Sugar

2 cup Flour

1 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

1/3 cup Vegetable Oil

2 Eggs

3 Tablespoon Sour Cream

3-4 Bananas

1 cup Chocolate Chips

Directions:

  1. Combine Sugar, Flour, Baking Soda, Baking Powder, and Salt in a medium-sized mixing bowl
  2. Combine Oil, Eggs, Sour Cream, Bananas, and Chocolate Chips in a different medium-sized mixing bowl
  3. Add the two mixtures together in a large mixing bowl and make sure it’s mixed well
  4. Pour mixture into a greased bread loaf pan
  5. Heat oven to 350°F, let the batter in the pan rest until the oven is heated
  6. Bake for 50-60 minutes

Coconut Joys

Ingredients:

1/2 cup Butter

2 cups Powdered Sugar

3 cups Shredded Coconut

2 oz. Unsweetened Chocolate, Melted

Directions:

  1. In a saucepan, melt Butter and remove from heat
  2. In a medium-sized mixing bowl, combine Powdered Sugar and Shredded Coconut
  3. Add melted Butter to the Powdered Sugar mix and mix well
  4. Shape rounded teaspoons of mixtures into to balls
  5. Indent the balls and drop onto a cookie sheet lined with wax paper
  6. Fill the indent with Unsweetened Chocolate
  7. Chill in the fridge until firm

Peanut Butter Cookies

Ingredients:

3/4 cup Peanut Butter

1/2 cup Shortening

1 1/4 cup Light Brown Sugar

3 Tablespoons Milk

1 Tablespoon Vanilla Extract

1 Egg

1 3/4 cups All-Purpose flour

3/4 teaspoon salt

3/4 teaspoon baking soda

Directions:

  1. Heat oven to 375°F
  2. Combine Peanut Butter, Shortening, Light Brown Sugar, Milk, and Vanilla Extract in a large bowl
  3. Beat at medium speed of electric mixer until well blended
  4. Add Egg, beat just until blended
  5. In a separate bowl, combine Flour, Salt, and Baking Soda
  6. Add Flour mixture at a low speed to the Peanut Butter mixture, mix until just blended
  7. Drop by heaping teaspoonfuls 2 inches apart onto an ungreased baking sheet, and flatten slightly in a crisscross pattern with tines of a fork
  8. Bake at 375°F for 7-8 minutes, or until set and just beginning to brown
  9. Cool 2 minutes on the baking sheet, remove cookies to a cooling rack to cool completely.

No-Bake Cookies

Ingredients:

3 Cups Quick Oats

2 Cups Sugar

1/2 Cup Butter

1/2 Cup Milk

1/2 Cup Cocoa

1/2 Cup Peanut Butter

1 tsp. Vanilla

Directions:

  1. Add Sugar, Milk, Butter, and Peanut Butter to a medium-size pot
  2. Bring to a boil for 1-2 minutes
  3. Add Vanilla
  4. Add Cocoa and Quick Oats to a large mixing bowl, and stir
  5. Pour the boiled solution over the dry solution, and mix well
  6. Drop spoonfuls onto a wax paper sheet about an inch apart
  7. Let cool for 15-20 minutes on the counter

Oreo Truffles

Ingredients:

1 medium package (1 lb. 2oz.) of any flavor of Oreos

1 8 oz. package of softened cream cheese

2 8 oz. boxes of semi-sweet baking chocolate

Directions:

  1. Use a food processor to grind the Oreos finely
  2. Add Cream Cheese to the Oreo in the food processor and blend well
  3. Take the solution and roll it into 1-inch balls
  4. Melt the Chocolate with a double boiler
  5. Dip the Balls into the Chocolate and set them onto wax paper
  6. Refrigerate or freeze for 1 hour

Jacob’s “Cookie” in a Cup

Ingredients:

4 tablespoon Flour

1/2 teaspoon Baking Powder

1 tablespoon Sugar

2 tablespoon Peanut Butter

1/4 cup Milk

2 tablespoon Chocolate Chips

Directions:

  1. Combine all ingredients in a medium-sized coffee mug
  2. Mix thoroughly
  3. Microwave for 1 minute 45 seconds on high power
  4. let cool for 1-2 minutes

Jacob’s “Cookie” in a Cup 2.0

Ingredients:

1 Egg Yolk

1 tablespoon Melted Butter

1/4 teaspoon Vanilla Extract

1 1/2 tablespoon Brown Sugar

1/8 teaspoon Salt

3 tablespoon Flour

1/4 teaspoon Baking Powder

2 tablespoon Chocolate Chips

Directions:

  1. Combine all ingredients in a medium-sized coffee mug
  2. Mix thoroughly
  3. Microwave for 1 minute 15 seconds on high power
  4. let cool for 1-2 minutes

Jacob’s “Brownie” in a Cup

Ingredients:

2 tbsp Brown sugar

3 tbsp Milk

1/2 tsp Vanilla essence

3 tbsp Oil

3 tbsp All-purpose flour

3 tbsp Cocoa powder

1 pinch Salt

Directions:

  1. Combine all ingredients in a medium-sized coffee mug
  2. Mix thoroughly
  3. Microwave for 1 minute 15 seconds on high power
  4. let cool for 1-2 minutes

Dave’s Chocolate Muffin in a Cup

Ingredients:

1-pint Chocolate Ice Cream

1/4 – 1/2 cup Self-Rising Flour

1 tablespoon Chocolate Chips

Directions:

  1. Get a medium-sized coffee cup, fill halfway with Chocolate Ice Cream
  2. Wait 5-10 minutes for Ice Cream to melt
  3. Add Self-Rising Flour until the cup is 3/4 full
  4. Add Chocolate Chips
  5. Mix until thoroughly blended
  6. Microwave for 2 minutes on high power
  7. Let cool for 1-2 minutes
