PURÈ DI ZUCCA

INGREDIENTI
-500 gr zucca pulita e sbucciata

-1 patata; media
-150 gr latte
-40 gr parmigiano reggiano
-1 noce di burro

-sale q.b.

PROCEDIMENTO

Tagliare a pezzetti la zucca e la patata e cuocerle nel latte. Quando le verdure si ammorbidiscono spegnere il fuoco, aggiungere sale, formaggio e burro.
Frullare ( con ad esempio frullino ad immersione ), servire ben caldo.

 

PUMPKIN PUREE

INGREDIENTS:

-500 gr cleaned and peeled pumpkin

-1 potato;

average

-150 gr milk

-40 gr Parmesan cheese

-1 knob of butter

-salt to taste

METHOD:

Cut the pumpkin and potato into small pieces and cook them in milk. When the vegetables soften, turn off the heat, add salt, cheese and butter. Blend (with for example an immersion beater), serve hot.

CROSTINI CON CREMA DI CARCIOFI

E SPECK

Per 4 persone 

 

Ingredienti

½ di baguette,3 carciofi,150 g di ricotta,  

1 limone,1 spicchio d’aglio,

120 g di speck tagliato a fette,

Olio d’oliva e.v., sale e pepe

 

Preparazione 15 minuti

Cottura 15 minuti

Educazione facile

 

Preparazione

Pulite i carciofi ricavando solo il cuore tenero

ed eliminando tutte le punte e la barba;tagliateli

a fettine e immergeteli in acqua e limone 

per evitare che anneriscono.

 

Nel frattempo soffriggete in padella l’aglio spellato 

con un filo d’olio e aggiungete i carciofi scolati.

Unite ½ bicchiere d’acqua,aggiustate di sale

e pepe e lasciate cuocere finché i carciofi

risulteranno morbidi.Frullateli brevemente 

in un mixer con la ricotta.

 

Tagliate a fette la baguette e disponetele su 

una taglia da forno;ungetele in superficie con

poco olio d’oliva e tostatele sotto il grill del forno 

fino a doratura.

 

Farcite i crostini con poca salsa di carciofi

e terminate con un ricciolo di speck ottenuto.

 

CROUTONS WITH ARTICHOKES AND SPECK CREAM

For 4 people

Ingredients:

½ of baguette, 3 artichokes, 150 g of ricotta, 1 lemon, 1 clove of garlic, 120 g of sliced ​​speck, Extra virgin olive oil, salt and pepper

Preparation 15 minutes

Preparation :

Clean the artichokes getting only the tender heart and removing all the tips and beard; cut them off into slices and dip them in water and lemon to prevent them from blackening. Meanwhile, fry the peeled garlic in a pan with a drizzle of oil and add the drained artichokes. Add ½ glass of water, season with salt and pepper and cook until the artichokes they will be soft. Blend them briefly in a mixer with ricotta. Slice the baguette and arrange them on top an oven cutter; grease the surface with a little olive oil and toast them under the oven grill until golden brown. Stuff the croutons with a little artichoke sauce and finish with a curl of speck obtained.

Carote al burro (contorno)

Ingredienti:                                                                                  Difficoltà: facile

800 g. di carote                                                    

1 ciuffo di prezzemolo

50 g. di burro (🥛)

20 g. di zucchero

                       Preparazione

  

Raschia leggermente le carote, spuntale e lavale, poi tagliale a listarelle.

Pulisci il prezzemolo, lavalo e tritalo finemente. Riduci il burro a pezzetti.

Metti sul fuoco una grande casseruola e raccogli dentro essa le listarelle di carota, ricoprendole a filo con l’acqua fredda. Aggiungici un pizzico di sale, lo zucchero e per ultimo il burro tagliato a pezzetti, quindi fai cuocere il tutto a calore moderato e a casseruola scoperta. Quando l’acqua sarà quasi completamente evaporata e le carote risulteranno ben tenere,

lasciale insaporire per qualche minuto nel sugo ristretto. Trasferisci le carote su un piatto da portata, cospargile con il prezzemolo e servi.

Ingredients:

1 sprig of parsley

50 g. butter (🥛)

20 g. of sugar

Preparation: 

Lightly scrape the carrots, peel and wash them, then cut them into strips. Clean the parsley, wash it and chop it finely. Cut the butter into small pieces. Put a large saucepan on the stove and collect the strips in it carrot, covering them flush with cold water. Add a pinch of salt, sugar and finally the butter cut into small pieces, then cook wax everything over moderate heat and with the saucepan uncovered. When the water it will have almost completely evaporated and the carrots will be very tender, leave them to flavor for a few minutes in the restricted sauce. Transfer the carrots on a serving dish, sprinkle with parsley and serve.
